Newbie: How to get an MTA set up?

Hi..  I'm a Pine refugee (don't shoot me! :).

There are a few things I need to configure to get mutt working
right -- such as getting an MTA which works well for a dialup
account.

Fetchmail + procmail work well to receive messages, and I
previously used Pine's simple MTA to send messages to a
smarthost.  Since mutt doesn't have this, which MTA should I
set up my system with, and how do I need to configure it?

I don't want to use one which processes mail in batches through
cron, but that's about all I know.  I'll need it to allow
"fake" information in the headers, too, since my From address
(below) won't match my hostname..

I use Exim, which is fairly easy to get up and running. Another
alternative would be a simple smtp client which just forwards all mail
to a smart host. ssmtp is one I've heard mentioned, and I wrote a simple
one myself earlier.  (I don't know why, let me know if you want a copy
of it. It's about 8K of C.)

There are many alternatives. I use sendmail because it's very configurable. But
it isn't considered the safest one. Alternatives are:

- postfix
- exim
- qmail
