I haven't ever used evolution but the simplest thing to do when transferring
from one mail client to the next is ensure the new client can read the
old mail box.

Thunderbird allows you to configure where your mailbox is.  Set up an account
in Thunderbird and look at Tools->Account Settings->Server Settings; note the
local directory text box at the bottom of that dialog.

So you don't even have to copy anything anywhere.

If you don't know where evolution puts your mail try doing 'ls -a | less'
on your home directory and looking for a directory like .evolution.

BTW: consider using something like /home/<you>/Mail as a directory for
your mail to come into.  Then if you want to change clients again you
know where your mail is.

Most mail clients save messages in a text format with some form of separator
between messages.  I believe an RFC states the separator should be a '.'
but some use blank lines.  Most mail clients seem to cope with this.

No, but you can transfer all your evolution mail & settings to a new machine by copying the whole evolution directory.
